How to Fix Chili When It’s Too Thick

When your chili is too thick, it’s easy to thin it out a bit. Just add some liquid. You can add beef, chicken, or veggie broth, or you can add a can of tomato sauce. You could add water, too, but it will dilute the flavor of the chili.

Then again, chili can be perfectly fine if it’s a little on the thick side. Chili can be thin like soup or thick like a stew. There’s no one right way to make chili: It’s up to you to make it however you like it!

Chili or Chili con Carne: What’s the Difference?

“Chili con carne” means “chili with meat” in Spanish. Most traditional chili recipes include meat, from Texas chili to the earliest examples of beef slow-cooked in a spicy, smoky sauce found in Mexico. If you order “chili con carne,” you can count on it having meat in it, probably beef. But if you order “chili,” you can’t be sure that you’ll get meaty chili. Vegetarian chili and vegan chili recipes are popular, too (not to mention pretty tasty), and there’s no meat in those. They mostly just have beans, though they can have lots of other veggies, too. Either way, if it says “chili,” it’s probably going to be good, but if you want meat in yours, look for “chili con carne” to be sure.

Chili Peppers You Can Put in Chili

Chili is called chili because it gets its flavor from chili peppers. Usually, chili uses cayenne pepper, but did you know that there are lots of other chili peppers that you can use in chili, too? Some of them are mild and sweet, and others are super-hot. Some of them are usually sold fresh, while others are dried or turned into powder. And some of them are probably familiar, like the jalapeno peppers we put on nachos or stuff with cheese, but there are probably others you’ve never heard of.

Here are some types of chili peppers that people put in chili:

  • Fresno chilies
  • Jalapeno
  • Chipotle
  • Guajillo
  • Poblano
  • New Mexico chilies
  • Habanero
  • Serrano

It’s worth trying out some of these other types of peppers in your next batch of chili. But do your research first: Some of them are really, really hot!

Chili Con Carne

Chili con carne is a Spanish name that means “chili with meat.” In Tex-Mex cooking, even though “carne” just means “meat,” it usually refers to beef. Traditional Texas chili is a true chili con carne, with lots of beef and no beans. But there are lots of variations on chili con carne, most of them including beans as well as beef. Here’s a classic chili recipe to start with, but feel free to experiment and come up with your own perfect recipe.

Ingredients

  • 2 tbsp vegetable oil
  • 2 lb lean ground beef
  • 1 large onion, diced
  • 4 cloves of garlic, minced
  • 2 1/2 tsp cumin
  • 1 tsp paprika
  • 2 tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 2 15-oz cans kidney beans, drained
  • 15-oz can black beans, drained
  • 30-oz can diced tomatoes
  • 30-oz can tomato sauce
  • 10-oz can diced tomatoes and green chilies

Instructions

  • Put a large skillet on the stove and turn the burner on to medium-high. Add the beef to the pan and cook it for about 5 minutes while stirring it with a spatula.
  • Next, add the onion to the skillet and continue cooking until it’s tender, about 4 minutes. Add the minced garlic and the seasonings and keep cooking everything for another minute or so.
  • Dump everything in the pan into a slow cooker. Add all of the remaining ingredients to the slow cooker. Stir everything together, then set the pot on low and let it cook for 6 to 8 hours.

Chili Powder Recipe

Chili powder is a key ingredient in many dishes, not just chili. But what if you don’t have any and you want to make a pot of chili? If you’ve got a lot of other common spices in your cupboard, you can probably make your own. Here’s what spices make up the mix:

  • Paprika
  • Cumin
  • Onion powder
  • Oregano
  • Garlic powder
  • Cayenne pepper

Some chili powders also include other stuff, too, like chipotle or ancho chilies. The great thing about making your own chili powder is you can add whatever you think will taste good. Mess around with the amounts of different ingredients until you find a mixture that’s exactly what you’re craving!
