This Rocky Mountain green chili is a family favorite that has an exceptionally unique and robust flavor. By starting our roasting our vegetables first it adds an authentic smokey flavor to your chili. I love eating this delicious chili in a bowl, but feel free to service it over eggs for a spicy breakfast, in enchiladas, or over rice for something more traditional. Its the perfect meal for football Sunday or any cold day.

Ingredients

  • 1 lb tomatillos (husked, peeled, and cut in half )
  • 3 Anaheim chili peppers (seeded and halved)
  • 1 green bell pepper (seeded and halved lengthwise )
  • 3 tbsp olive oil (divided)
  • 2 jalapeno peppers (seeded and halved lengthwise )
  • 1 yellow onion (peeled and quartered)
  • 2 lb pork shoulder (cut into 1-inch chunks)
  • 1 tsp salt (to taste)
  • 1/2 tsp pepper (to taste)
  • 2 tomatoes (chopped)
  • 1/2 cup fresh cilantro (chopped)
  • 4 garlic cloves (finely chopped)
  • 2 cup chicken stock
  • 1 tbsp fresh oregano (chopped, dried oregano ok)
  • 1 tbsp ground cumin
  • 1 tsp chili powder
  • 4 oz cream cheese (room temperature (chopped into smaller pieces))

Instructions 

  • Start by preheating the oven to 425F (220C).
  • On a lightly oiled baking sheet, arrange your husked, peeled and halved tomatillos, seeded and halved Anaheim chiles, seeded and halved jalapenos, quartered onion, and seeded and halved green bell pepper. Lightly drizzle 1 tablespoon of olive oil over the vegetables to evenly coat.
  • Place your vegetables in the preheated oven and allow them to roast for about 25 minutes, or until you start to see charring brown spots. Remove vegetables from the oven and allow to cool. Once cooled, chop vegetables into small bite-sized pieces.
  • In a large skillet over high heat, add 1 tablespoon of olive oil and sear the pork until evenly browned for about 10 minutes. Season generously with salt and pepper while cooking.
  • Once browned, add the pork pieces and roasted veggies to your crockpot and stir to combine. Next, add in your tomatoes, garlic, chicken stock, oregano, cilantro, cumin, and chili powder. Cover your crockpot and set it to the LOW setting and cook until the pork becomes fork-tender, about 4 hours on HIGH or 7 hours on LOW.
  • About one hour before serving, add your chopped cream cheese pieces into your crockpot. As the cream cheese melts, stir regularly to combine with chili.

  • 2 tbsp vegetable oil
  • 1 1/2 lb lean ground beef
  • 1 yellow onion (diced)
  • 1 jalapeno (seeded and finely diced)

  • 2 tbsp vegetable oil (can substitute olive oil)
  • 3 lb beef chuck (cut into bite-sized pieces)
  • 1 cup celery (diced, about 3-4 stalks of celery)
  • 2 small yellow onion (finely chopped)
  • 2 jalapeños (remove seeds for less spicy chili)
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 4 garlic cloves (minced)
  • 1 tsp oregano
  • 2 tsp brown sugar (dark or light works)
  • 3 tbsp tomato paste
  • 1 12oz can/bottle dark beer
  • 1 28oz can crushed tomatoes
  • 1 15 oz can diced tomatoes (with juices)
  • 2 bay leaves
  • 1/2 cup fresh cilantro (chopped)
  • 1/4 cup fresh parsley (chopped)
  • 2 tbsp masa harina
  • sour cream (optional topping)
  • red onion (optional topping)

Chili Seasoning Mix

  • 2 1/2 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp smoked paprika (can substitute regular paprika)

  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground cinnamon

Instructions 

  • On your stovetop and using a large skillet, heat oil over medium-high heat. When hot, add your bite-sized meat pieces in a single layer until the bottom is covered. There is a lot of meat so you’ll need to do cook the meat in batches. Brown each side of your meat for about 1-2 minutes. Remember, you’re only searing the meat in the skillet, not cooking it all the way through. Once browned, place meat in the crock pot. Continue this process until all the meat is properly browned and in the crock pot. Feel free to add more oil to the pan as needed.
  • Using the same pan, add celery, onions, jalapeño, kosher salt, and black pepper. Cook until celery becomes tender and the onion is translucent. Then add your garlic and continue to cook for 1-2 minutes longer until garlic becomes aromatic.
  • Then, add in you chili seasoning mix, oregano, and brown sugar and continue to cook for another 1-2 minutes stirring the ingredients together.
  • Next, add in the tomato paste while stirring to evenly combine all ingredients. Continue stirring to prevent the ingredients from burning. Add in your beer while stirring and cook for 4 minutes. Your ingredients will start to reduce. Next, add this mixture into the crock pot with your meat.
  • Next, add the crushed tomatoes, diced tomatoes, and bay leaves into the crock pot. Stir to evenly mix all ingredients. Place the cover on the crockpot and cook on the low setting for 6-8 hours. You can tell when your chili is done by checking the meat, it should be fork tender.
  • Next, using a spoon, remove bay leaves from your chili. Then add in your cilantro, parsley and masa harina and stir to combine. Masa harina will thicken your chili. So feel free to add in more one small spoonful at a time until it reaches your desired consistency.
  • Serve immediately with your desired toppings (fresh chopped onion, jalapeño, cilantro, shredded cheddar cheese, or sour cream).

Ingredients

  • 2 poblano peppers
  • 2 Anaheim peppers
  • 2 jalapenos
  • 6 tomatillos (husks removed)
  • 1 white onion (peeled and quartered)
  • 3 garlic cloves (finely chopped)
  • 2 lb pork shoulder (trimmed and cubed)
  • 2 1/2 tbsp all-purpose flour
  • 2 tbsp vegetable oil
  • 1 cup chicken broth
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 3/4 tsp ground cumin
  • 1 bunch cilantro (bulk of stems removed)

Instructions 

  • Start by roasting your veggies. Preheat oven to 450F. While the oven is pre-heating, place all of the peppers, tomatillos, garlic, and onion onto a baking sheet. Place the baking sheet in the oven and let the veggies roast for 20-25 minutes or until the veggies start to become charred on to. Be careful to not let them overcook. Once charred, pull the veggies out of the oven and let them cool.
  • Once the veggies have cooled down, place them into a blender and add the cilantro. Pulse the blender until the veggies are broken down into a salsa that reaches your desired thickness. If the salsa is too thick to blend properly, add chicken broth a ¼ cup at a time to the blender while pulsing.
  • Place the pork shoulder on a baking sheet and coat evenly with the flour. Once coated, place a large skillet on the stove, add enough oil to cover the bottom of the pan and set to medium high heat. Once the pan and oil are hot, carefully place your flour coated pork in the pan and begin to brown on all sides. You do NOT need to cook through. If all the pork is too much to fit in the pan, you may need to cook the pork in batches.
  • Once your veggies are roasted and meat browned, add all ingredients into the slow cooker and stir to evenly combine. Cover and cook on LOW for 8 hours without opening the lid during the cooking time. Serve over tortillas with your favorite toppings!
